Using PHP at hosted domains

I have a hosting account with a large company.  I have used Content Management Systems and other pre-installed scripts on the account, but have no idea how to start developing my own php programs.  The control panel (CPanel) for the account has a link, PHP Info, which displays pages of information regarding php on the server - for example, configuration command, the location of a configuration file, and so on.

I see that I cannot simply create a php file, upload it and have it run.  How do I start?

Thank you
