PHP remove / in output

I have a form that processes through php and mails me the information input from the form. The problem is when anyone inputs anything with a ' like I'm the mailed output looks like I/'m. I would like to know how to do this. Sorry if this is to simple but I'm a php newb. The code looks like this:

No! Just turn off magic quotes. It's evil.
