Opencart PHP code help

I have this code,

This is a code to display this; (see pic)

 

 

Now my problem is I do not know how to make it display monday instead of sunday as we cannot deliver on sunday?

 

How would I code it so it knows when the date is sunday so then it replaces sunday with monday.

 

Any help is grealty appcireadted!
