I need Chinese Characters to work in this form, - mbstring?

I want to use "form-builder" by "Coffeecup", and the flash email form works great in English, but when I type Chinese Characters into the email, and then I check it on the receivers end, it's not in Chinese anymore, only question marks in it's place. 

 

I checked this out on their forums and they said: "CoffeeCup Form Builder can handle any character set as long as mbstring is compiled into PHP.  You can determine if this is installed by going to http://www.yourhosting.com/myform.php?debug=info and searching for mbstring"

I'm very new at php, do I only need to edit the "myform.php" file that was created with the email form? Any help really appreciated!!!

 

P.S. I need to be able to use Traditional (Big-5) and Simplified Chinese.
