You'd have to at least leave the content-type header. Some headers can be removed, such as the server signature, and php exposing itself. What are you trying to get rid of?

 

Below are some notes as to what I turned off on my server:

 

 

The header that is sent by apache could theoretically let a hacker have info about the server, so I changed Apache's header to "Prod" in /etc/apache2/apache2.conf

 

  ServerTokens Prod

 

Also, if a user gets an error page, by default Apache exposes other server info, so I changed the server signature to off

 

  ServerSignature Off

 

PHP also inserts it's own header, which I turned off. The file is /etc/php5/apache2/php.ini

 

  expose_php = Off
