adding variables into pdf document

Ok, so I've been struggling with this idea and I decided to come here for some help.

I am looking to take data in via php and then populate multiple PDF forms.
My questions are
1) Would a class such as http://www.ros.co.nz/pdf be able to do this?
                  OR (what i would really like ->)
2) Is there a program out there that will allow you to in effect "strip" down a PDF form and then assign names to each of the fields while keeping the look and feel of the document?  From there, I thought it would be the easiest to simply "drop" the data into the corresponding field.

ANY suggestions or help is much appreciated.
