how to add strings to an associatve array

how can i add two more variables to this array before passing it to the view: Say;Sub=>math and level=>''valley" Or how can i add two more variables to the array before passing them to view

incase i want to remove the two how do I do that in php,so i get the original array

unset($data['level']);
