Port Fowarding - Need to know how to do this

I'm sure there is a guide if look on the support section of your router manufacturer's site.  It should be straight forward though if you know the following:

 

1.  How to logon to the router

2.  The port # you need to be opened

3.  The ip address of the machine (server)

 

The answer to your second question now:  If you look in the DHCP section of router, there should be a place to assign static ip addresses.  Mine does it by MAC address.
