I use this set-up and have never had any problems at all.

<?php
$to = "***********";
$subject = $_POST["subject"];
$msg = $_POST["msg"];
$name = $_POST["fromWho"];
$email = $_POST["fromWhere"];
$headers .= "From: " . $name . "<" . $email . ">\r\n";

// SEND THE EMAIL
ini_set(sendmail_from, $email);
mail($to, $subject, $msg, $headers);
ini_restore(sendmail_from);
?>
