using " ' " in a variable

Like so:

 echo 'string with \' in';

 

or

echo "string with ' in";

 

Both will return the same result, except the first one uses \' to output an apostrophe within a string. This is because it is escaped using the escape character (\). The reason for this is because the string is defined within single quotes, if you don't escape quotes within your string PHP will think you're ending the string and thus you'll most likely get an error. The same applies to strings defined with double quotes too.
