You can take them over manually, or have CPanel back them up and unpack them at the new host. The new host may have CPanel -> Cpanel transfers available. You can't do it, but they can. Ask them. It ends up an exact mirror of your site, including email and MySQL databases. All you do is switch your nameserver and go. If this isn't possible, and you can move the files over manually, then all you need to do is grab your database(s). You can use phpMyAdmin to export to a SQL file, or again, use CPanel's backup page to do a DB backup. Simple stuff....
