I'd like to have a duplicate copy of the mysql data on the server so I can demo websites locally. Problem is, they're scattered across multiple "databases". is there an easy way to clone everything at once?

If you have access to the underlying files themselves, this should be easy.

I have server root access. Where do the files reside?

Check your my.cnf file for the location of your datadir.
