I have this:

<?php
echo '<table width="200" border="0">
      <tr>
        <td align="center">Logged in as: $user. | My Profile</td>
</tr>
      <tr>
<td align="center">Log out | Problems?</td>
</tr>
     </table>';
?>

How do I get $user to be processed by php?

As long as you have the variable defined, you can do it like this:

<?php
echo '<table width="200" border="0">
      <tr>
        <td align="center">Logged in as: '.$user.'. | My Profile</td>
</tr>
      <tr>
<td align="center">Log out | Problems?</td>
</tr>
     </table>';
?>
